Crystallized ginger and fresh gingerroot give this easy, slow-cooker apple butter a one-two punch of flavor your friends and family will love.
Ingredients

- lb Gala apples, peeled, cored and shredded
- 1/2
- cup packed light brown sugar
- 2
- tablespoons finely chopped crystallized ginger
- 1
- tablespoon finely chopped gingerroot
- 1/4
- teaspoon salt

- 1 Spray 5-quart slow cooker with cooking spray. Add all ingredients. Stir to combine.
- 2 Cover; cook on High heat setting 3 hours.
- 3 Uncover; cook on High heat setting 1 to 2 hours longer, stirring occasionally, until mixture has thickened. Turn off heat; let cool 15 minutes.
- 4 In blender or food processor, puree mixture (in batches, if needed) until smooth.
- 5 Cool completely. Transfer apple butter to jars; seal tightly. Store in refrigerator.
